Chicken Tortilla Soup

(I got this recipe from someone that used to work for SU in the training dept. It was shown on her blogspot and it sounded good, so I thought I'd try to make it too.)


  • 2 cans Cream of Mushroom soup
  • 2 cans Cream of Chicken soup
  • 2 cans Cream of Celery soup
  • 2 cans Cheddar Cheese soup
  • 2 (15 oz.) cans chicken broth
  • 1 (15 oz.) can diced tomatoes. (I used the spicy ones.)
  • 1 cup medium picante salsa
  • 1 (4.5 oz.) can chopped green chilies
  • 1 medium onion, chopped (I used dried onion cuz I was in a hurry.)
  • 4 cloves fresh garlic, minced
  • 1 teaspoon red chile powder
  • Salt and pepper to taste (I didn't even need to add salt.)
  • 1/4 cup fresh, chopped cilantro (You can do without this if you don't like it.)
  • 4 cooked chicken breasts, cut into small chunks
  • 1 package flour tortillas
  • 1/2 pound longhorn stye colby cheese

In a large stockpot combine and whisk together until smooth, all 8 cans of soup. Add chicken broth, tomatoes, salsa, green chiles, onion, garlic, chili powder, salt and pepper.

Bring all ingredients to a full boil, reduce heat, and simmer for 1 hour.

Add cilantro and chicken breast chunks. Simmer another hour.

While soup is simmering make your soup toppings. Cut flour tortillas into small thin strips and deep fry in hot oil until lightly browned.

Shred cheese.

To serve: Ladle soup into bowls, top with shredded cheese and fried tortilla strips.

BLT Dip

BLT dip
1 cup Sour Cream
1 cup Mayo
1 jar bacon bits (real ones not imitation)
tomatoes for color diced
4 green onions (I used a package)
lots of Black pepper ( I just guessed on how much lots is)

Ramona's Cake

Fruit Cocktail Cake

1 1/2 cup Sugar
3/4 cup vegetable oil
2 eggs, beaten
1 can fruit cocktail-drained
2 cup flour
1 3/4 (tsp?) baking soda and baking powder
1/2 tsp. salt

40-50 minutes at 350

poke holes in cake and pour over hot cake...

3/4 cup white sugar
1 stick butter
1/2 cup pet milk
1 tsp vanilla

2 minutes...boil hard

Brown Sugar Caramel

1 1/2 cup brown sugar
3/4 cup white sugar
3 T shortening
3 T butter
10 T milk
1 1/2 T white corn syrup
1 T vanilla

Cook over low heat until soft boil stage.

Fruit Salad

1 can pineapple, crushed
1 can orange slices
1 cup cottage cheese, small curd
1 cup whipped cream
1 box orange Jello
1/2 cup nuts
1 cup marshmallows

Drain pineapple and oranges. Sprinkle jello on dry and stir in.

Never Fail Fudge

6 cups sugar
2 sticks margarine
1 can carnation milk
2-6oz pkgs chocolate chips
1 jar marshmallow cream
1 cup nuts

Cook sugar, butter, and milk for 16 minutes. Turn off the heat and add chocolate chips. Stir until melted completely and then add marshmallow cream and nuts. Pour into well buttered pan or dish. When completely cool, cut into squares.

Sweet Frozen Pickles

7 cups cucumbers
1 cup onion, diced
1 cup green pepper, diced
1 cup vinegar
2 cups sugar
2 tsp. salt
2 tsp. celery seeds

Mix well. Put in (refrigerator?) 24 hours. Take out and put in freezer.
